*3  Observed the following potentially hazardous foods to be held at improper temperatures. 1. Ham was found at 60F in the expedition area. 2. Tuna was found at the salad bar at 48F. 3. Potato salad was found at 48F at the salad bar. Provide for all cold potentially hazardous foods to be held at 41°F or below at all times except during necessary periods of preparation. 750.120 Immediate/Onsite
*12  Observed an employee drink/drinking in the following location. Employee drink was stored on the prep table. Employee removed drink. The consumption of food/drink shall be done in a designated area only. 750.530 Immediate/Onsite
*20  Observed the sanitizer solution to be too weak at the following location. There was no sanitizer at the three compartment sink. Sanitizer needs to be at at least 200 PPM. This was corrected. Provide for the sanitizer solution to be mixed to the appropriate level for the type of sanitizer being used. 750.830 Immediate/Onsite
Observed the following food products to be improperly stored. Boxes of food on the floor in the dry storage room. Provide for all food products to be stored at least six inches off of the floor. 750.130 Immediate/Onsite
15  Observed the following improper non-food contact surfaces. There is plastic located on the fan case in the walk-in cooler. Remove plastic. Provide for all food contact surfaces to be smooth, easily cleanable, non-absorbant, corrosive resistant, and light colored. 750.690 Immediate/Onsite
22  Observed the following food contact surfaces to be unclean. 1. Randell cooler had ice built up in it at the top part of cooler. Defrost ice from this cooler. 2. Bakery walk-in cooler has food debris on shelves. Clean and maintain. 750.800 Immediate/Onsite
23  Observed the following non-food contact surfaces to be unclean. 1.Exterior of the dishwasher has debris on it. 2. Interior of fryers has grease and debris built on it. 3. There is grease & debris on the back of the stoves & fryers. 4. Exterior of soup vats has food debris on them. 5. Bottom of Anets Proofer has calcium built up on it. 6. Containers has debris on them. 7. Shelves where can food is stored has mold growth on them. 8.Interior of fryers has grease built up on the interior parts in grill area. 9. Seal gaskets on Traulsen cooler doors has mold growth on them. Clean and maintain. 750.800 Immediate/Onsite
36  Observed the following floor areas to be unclean: 1. Floor is in need of painting under the dish sprayer. 2. Floor has debris on it under & behind the ice machine. 3. Floor under the soup vats has food debris on it. 4. Floor under the shelves in the bakery walk-in has food debris on it. 5. Floor in catering room has debris on it.
